John F. Martin Bacon Wrapped Fruit Appetizers

With the holidays behind us, we have a simple and easy appetizer recipe that can help you use some of the extra fruit that was intended for baking pies and other pastries. Our bacon wrapped fruit appetizers are sure to please and perfect for game day. Mix and match your favorite fresh fruits to create these sweet and savory bacon & fruit bites.

 1 tbsp extra-virgin olive oil
 23 peaches, pineapple spears, gala apples, or mangoes halved, pitted (or seeds removed) and sliced into 6 wedges
 8 oz sliced bacon, each slice halved
 Toothpicks or party picks for serving

Pre-heat the oven to 400F. Brush a parchment lined baking sheet with the one tablespoon of extra virgin olive oil.

Wrap a halved bacon slice around each pieces of fruit of your choice and place on the baking sheet seam side down.

Bake for about 10-12 minutes or until the bacon is crisp. Remove the baking sheet from the oven and let them cool for a few minutes on a plate lined with a paper towel to absorb any additional grease. Then carefully transfer the bacon wrapped fruit to a serving platter. Serve with toothpicks or party picks.

Optional: Drizzle with a balsamic glaze or sprinkle chopped pieces of fresh basil.

Notes: On occasion when fresh peaches or peaches are not in season, You can use good quality frozen peaches. Method of cooking is the same using the frozen peach. Don’t thaw the peaches prior to baking. Also, fresh apples, pears, pineapple or mangos will also work nicely as well.
